These three words are enough to spark an argument on the internet (a debate also covered by Burger Lad® and Miss Milkshake in the very first issue of GBK’s First Bite Magazine).

Australians would have my back, while Gordon Ramsay probably got me on a black list judging by his reaction to pineapple on pizza.

But I’m not here for an argument, just a little introduction to a mainstay in Singapore: McDonald’s Signature Collection – Buttermilk Crispy Chicken.

Out of the box, I first noticed that the burger isn’t quite steady and very hard to hold in a single hand.

If burgers had an authority like buildings have for sound structural plans, the Buttermilk Crispy Chicken would be rejected for the reason of “poor burger integrity”.

The problem with the integrity of the burger was the size of the chicken, which left a good amount of space between the buns and protein.

Though there was the promise of “flavoured with buttermilk”, the chicken thigh doesn’t quite taste like that.

Anybody who cooks can tell you that buttermilk doesn’t serve to flavour fried chicken, but to tenderise it.

Ignoring their promise, the chicken thighs are tender and give way easily to any pressure from my teeth.

Individually, the crust is crispy, but the juices from the pineapple and the accompanying sauce rendered it a little soggy in a full bite.

A full bite is quite delicious as there is a little bit of every taste; a little sour from the pineapple and tang from the mayo.

You get hotness from the black pepper in the mayo, savoury chicken, some sweetness from both pineapple rings and the lightly dressed cabbage.

This is all topped off with a soft marshmallow like texture from the bun.

The flavours work well, but the pineapple taste is quite dominant in here, as does the black pepper mayo being surprisingly spicy, which I can see turning some people off.

Another complaint is that the pineapple doesn’t actually have a grilled taste to it, missing the char that comes from the caramelisation on the grill.

Poor burger integrity also meant that about 25% of your bites are without chicken (sounds like the Chicken Big Tasty!).

Is this a worthy item of the Signature Collection? I would say yes.

It is a good upgrade to Singapore’s most iconic burger, the McSpicy, or as we call it, the McLaosai (which you can read more about here), but with some shortcomings that still make it feel like fast food.
